National magazine honors Passport Cafe sandwich as "Sandwich of the Month" for February

Food Management Magazine has named a sandwich from the University of Richmond’s Passport Café as sandwich of the month for February.

The mini chicken sandwich debuted in October 2012, said Maya Vincelli, assistant director of retail operations. Karen Kourkoulis, manager and head chef at Passport Café, and cook Eliot Cleveland created the sandwich from an idea Cleveland had after hearing many requests for chicken and bacon together on a sandwich.

The sandwich has chicken breast and bacon with shallots, tomatoes and cheese. It’s served on telera rolls, a Mexican-style bread imported from the West Coast. “Sometimes the simple things are the tastiest,” Kourkoulis said about the sandwich’s composition.

Its key ingredient, according to the article, is KIMKIM, an award-winning, Korean-style hot sauce created by Steve Kim, a 2012 alumnus of the Robins School of Business.

About 800 mini chicken sandwiches are sold per month, Vincelli said, and the sandwich sells for $4.99.

The award is “a great reminder that I have a lot of talented people working for us,” Vincelli said. Kourkoulis said that honors such as this award help shake up the daily grind for her busy staff.

Passport Café is located in the Carole Weinstein International Center and is open to the public daily except Sunday. Breakfast, lunch and dinner items are sold.
