Chef Gravely promoted to full-time manager of Culinary Arts Center
Chef Martin Gravely, longtime chef in the School's Culinary Arts Program, has been promoted to full-time manager of the School's Culinary Arts Center.
Gravely's former position was part-time coordinator of the Center. His promotion recognizes his leadership and creativity in developing and promoting the Culinary Arts Program as well as the Center.
Gravely has long taught core courses for the Culinary Arts certificate program.
Tools of the Trade is designed as an introduction to both the culinary arts program and its instructional facility The course is geared toward properly preparing students for participation in future hands-on classes at the Center for Culinary Arts.
Chef's Skills explores basic building-block cooking techniques like pan searing and pan sauces, blanching, braising, emulsifying, grilling, steaming, and proper pasta cooking.
Gravely also offers speciality courses and electives. This semester, for example, he is offering a Fall Wine and Dine Excursion that includes visits to a nearby winery and dinner at the Inn at Little Washington along with one of the semester's Wine and Dine Friday sessions that helps participants pair "home-run" meals with fine wine selections.
